creamy crab biscuits

 
So a few weekends ago, a few of my girl friends and I got together for one of our (many) bake-dates we've been having this summer.  We made these ah-mazzzzing "sausage biscuit things" that were just plain epic.  Seriously?  Words fail 'em.  And they're super super easy, but look quite nice even as an appetizer for a fancy smancy dinner party or even just a potluck with friends.

 
I decided to change 'em up a bit, though, and used crab instead of the sausage.  All you do is slap that slab on cream cheese in a bowl and mix it with a spoon to make it soft.  Then, dump in your bag of crab (yeah, yeah, I'm lame and cheap and used imitation...) and stir it all up.

Then, place the biscuit rounds (from a package...mmm, saturated fat) into cupcake tins, and form them to the pan to make a well in the middle.  Fill with the cream cheese and crab mixture, and then set it in the oven (350 degrees, please) for about 15 minutes or so, or until the edges of the biscuit are slightly browned.

I'm actually about to take these over to my friends' house this very instant for a girls night of girly drinks, desserts, appetizer-y foods, and swimming.  Nothin' like girl friends who you've known for nearly half of your life :)

Hi all. Just saying hello via non-food blog post from my little corner of the world.  All is good; still baking, still happy, still loving life....yes, like that cute little fur-ball :)

 
The summer's definitely in full-swing, even though I am still knee-deep in biochem and microbio-lovin' and my internship.  As busy as it all is, I'm strangely happy with it all and enjoying every minute....especially my internship, and especially when I get to work with the kiddies.  They are just so so fun, and they make me so happy without fail every time I visit them at their YMCA camp to pass around lunch-y things and play games afterward.  I love talking with these little people and they just put a gigantic grin on my face when I leave them for the day.  Favorite quotes so far?

Cutie-pie girl: "I like your face.  I think it's cute."

Boy: "Are you two sisters?"
Me: "Ummm, no...do we look like sisters?"
Boy: [shakes head] "No.  But you both have the same skin color!"

Another girl kept calling popcorn "pop-pop-pop".  Another boy with wildly curly hair is nicknamed X-Man.  Another boy is a pain in the ass and asks me to give him too much food.

Sorry, pain in the ass-boy....

I've also got a vacation or two coming up and visits from fun people!  Can't wait, can't wait.

Also...isn't this beautiful?  And this is crazy to think about.  And most importantly, these days are beautiful days to be alive. :)

  I fear for my future nutrition clients, I really do....



Do I warn them that their dietitian ate grilled peanut butter and M&M sandwiches during her grad school days?

It was quite the epic sandwich.  The creamy peanut butter, the crispy bread, the crunchy M&Ms.

Nahhhh....they don't need to know. :)
